  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk (full-fat for creaminess)
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped
  • Cooked rice or naan bread for serving

Instructions

  1. In a large skillet or pan, heat the coconut oil or olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.
