HPP - What is it?

What is HPP?

High pressure processing machine - O2 Living blog about HPP for organic, cold pressed Living Juice High Pressure Processing - also known as HPP - is the use of cold pasteurization process to ensure the safety and stability of foods and beverages, without the use of preservatives or heat.  HPP is an FDA- and USDA- approved method for preserving beverages, like Living Juice's organic, cold-pressed juices. HPP is also the only natural way to extend the life of chilled, clean products.

How does HPP work?

HPP works through applying extreme hydraulic pressure. Food and beverages in their final, sealed and flexible packages are then put through a cylinder-shaped pressure chamber (as seen in the photo above). Up to 87,000 pounds of water pressure per square inch can then be applied. This pressure is equal to the water pressure found at the deepest parts of the ocean! The result? The pressure kills spores, mold, yeasts, and dangerous pathogens. Food and beverages that have gone through HPP can have a shelf life extended by up to 10x, with no chemical preservatives, heat or irradiation.

Benefits of HPP

1. Quality

Because HPP does not require heat or chemicals, the quality of the food and beverages is preserved. HPP destroys all of the things that can create spoilage, but does not rob the food and beverages of its vitamins, minerals and other functional benefits. Using HPP on our juices maintains the natural vitamins and minerals found in the fruits and vegetables! The same does not hold for conventional juices, which are heat pasteurized.

2. Taste

Organic cold-pressed Living Juice Fresh Start made with organic apples ginger and lemonsHPP maintains higher quality food and beverages because it doesn't introduce heat or preservatives, resulting in food and beverages that taste better! Not only do HPP juices have a fresher taste, but they also have better appearance, texture and nutrition than juices processed with heat.

3. Food Safety

High pressure processing removes harmful bacteria, spoilage organisms and ensures food safety. Pathogens that can cause E. coli, salmonella and listeria are killed during HPP.

4. Nothing artificial!

High pressure processing is an all-natural process. No chemicals and no preservatives means that there's nothing artificial going in to our organic, cold-pressed juices!
