Healthy Coleslaw

Like its cruciferous vegetable cousins kale and broccoli, cabbage is chock-full of nutrients. It’s also the main ingredient in summer staple coleslaw, but picnickers beware: that mayonnaise-drenched side salad is packed with fat and calories. Opt for a healthier version, like the one below.

Healthy coleslaw

Ingredients

  • 2 cups finely sliced organic red cabbage
  • 2 cups finely sliced organic green cabbage
  • 2 cups organic carrots, julienned
  • ½ cup organic walnuts (optional)
  • ¼ cup olive oil
  • 2 tbspns organic lemon juice
  • 1 clove garlic, minced
  • salt to taste
  • ¼ cup chopped parsley

 Recipe

  1. Combine cabbage, carrots and walnuts (optional).
  2. In a small bowl, combine the olive oil and lemon juice. Add the garlic and salt and blend.
  3. Toss dressing with cabbage mixture. Add salt to taste, sprinkle parsley on top.
