Healthy Coleslaw

Like its cruciferous vegetable cousins kale and broccoli, cabbage is chock-full of nutrients. It’s also the main ingredient in summer staple coleslaw, but picnickers beware: that mayonnaise-drenched side salad is packed with fat and calories. Opt for a healthier version, like the one below.

Ingredients

2 cups finely sliced organic red cabbage

2 cups finely sliced organic green cabbage

2 cups organic carrots, julienned

½ cup organic walnuts (optional)

¼ cup olive oil

2 tbspns organic lemon juice

1 clove garlic, minced

salt to taste

¼ cup chopped parsley

 Recipe

Combine cabbage, carrots and walnuts (optional).

In a small bowl, combine the olive oil and lemon juice. Add the garlic and salt and blend.

Toss dressing with cabbage mixture. Add salt to taste, sprinkle parsley on top.
