Like its cruciferous vegetable cousins kale and broccoli, cabbage is chock-full of nutrients. It’s also the main ingredient in summer staple coleslaw, but picnickers beware: that mayonnaise-drenched side salad is packed with fat and calories. Opt for a healthier version, like the one below.
Ingredients
- 2 cups finely sliced organic red cabbage
- 2 cups finely sliced organic green cabbage
- 2 cups organic carrots, julienned
- ½ cup organic walnuts (optional)
- ¼ cup olive oil
- 2 tbspns organic lemon juice
- 1 clove garlic, minced
- salt to taste
- ¼ cup chopped parsley
 Recipe
- Combine cabbage, carrots and walnuts (optional).
- In a small bowl, combine the olive oil and lemon juice. Add the garlic and salt and blend.
- Toss dressing with cabbage mixture. Add salt to taste, sprinkle parsley on top.
