Hydrating, Vegan Cucumber Watermelon Avocado Salad

We're approaching the dead of summer... the temperature is rising, humidity is growing, and we're all looking for ways to stay cool. This delicious, hydrating and vegan recipe will keep you full, refreshed and hydrated on these hot summer days and nights. This salad combines fruits and veggies into a unique, tangy and sweet treat! We like to pair it with our savory organic, cold-pressed Green Vitality, with organic kale, cucumber, celery, lemon, fennel and parsley. 



  • 1/2 seedless, organic watermelon, cubed 
  • 2 organic cucumbers, cubed 
  • 1/2 red, organic bell pepper, diced 
  • 1/2 orange, organic bell pepper, diced 
  • 1/2 organic onion, diced 
  • 1 organic avocado, cubed 
  • 1/4 cup of finely chopped cilantro 

Salad Dressing 

  • 1/4 cup of organic avocado oil (or olive oil) 
  • 2 tsp organic, fresh lime juice 
  • 2 tsp, organic fresh orange juice 
  • Himalayan sea salt, to taste 
  • Freshly ground black pepper, to taste 


  1. In a bowl or jar, shake together all salad dressing ingredients. 
  2. In a large bowl, combine and mix together all salad ingredients, except cilantro.  
  3. Mix the dressing over the salad, and add any salt and pepper for taste. 
  4. Sprinkle cilantro over top and enjoy!
