While you might want to fuel up before an extended workout, or grab a bite when your energy starts to flag during a busy workday, in many cases reaching for a store-bought energy bar can mean filling up on high fructose corn syrup and saturated fat. Instead, stock up on an easy-to-make pick-me-up that’s a source of calcium, iron, potassium and more - sugar substitute mesquite is both gluten-free and high in protein, and will help you feel fuller for longer.
Ingredients:
- 1 cup rolled oats
- 1 cup raw almonds
- 2 cups pitted dates
- 2 tbsp. + ¼ cup raw carob powder, separated
- 2 tbsp. mesquite powder
- 1 tsp. vanilla
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- Pinch of salt
- 2 tbsp. melted coconut oil
Instructions:
- Place oats, almonds, dates, 2 tbsp. carob powder, mesquite powder, vanilla, cinnamon, nutmeg and salt in a food processor. Blend for two minutes, then add oil and process until combined, or until mixture will hold together.
- Place mixture in a large bowl and shape into small balls, roll in remaining carob powder and place on a parchment-lined tray.
- Freeze for 30 minutes.
