Ingredients:
- 1 cup rolled oats
- 1 cup raw, organic almonds
- 2 cups pitted, organic dates
- 2 tbsp. + ¼ cup raw carob or cocoa powder, separated
- 2 tbsp. maple syrup
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- Pinch of salt
- 2 tbsp. melted coconut oil
Recipe:
- Place oats, almonds, dates, 2 tbsp. carob powder (can sub cocoa if carob isn't what you have on hand), maple syrup, vanilla extract, cinnamon, nutmeg and salt in a food processor. Blend for two minutes, then add oil and process until combined, or until mixture will hold together.
- Place mixture in a large bowl and shape into small balls, roll in remaining carob (or cocoa) powder and place on a parchment-lined tray.
- Freeze for 30 minutes.
- Store in an air-tight container in the refrigerator. Enjoy!
