Springtime Superfood Smoothie

Though far from completely over, the Covid-19 pandemic appears to be slowing down as immunization efforts continue to ramp up. A dwindling pandemic and the imminent arrival of a new season brings plenty to celebrate. Here is a protein packed, nutrient-full green smoothie to represent the arrival of spring foliage and a healthy and happy spring.

Ingredients

Vegan Green Power Smoothie

  • 1 cup unsweetened almond or soy milk
  • 1-2 handfuls of spinach
  • 2 frozen bananas
  • 2-4 soft pitted dates
  • 2 tbsp hemp hearts
  • 1 tbsp natural peanut butter
  • 2 ice cubes

Superfood Topping (Optional- This is up to you!)

  • 2 tbsp hemp seeds
  • 2 tbsp chia seeds
  • 2 tbsp raw buckwheat groats
  • 2 tbsp slivered almonds (or pumpkin seeds)

Instructions

Vegan Green Power Smoothie

  1. Combine all ingredients into a blender, blend on high power until smooth and all course bits have been ground out.

Optional Superfood Topping

  1. Simply sprinkle on top and enjoy! (If too coarse for your liking, grind with a mortar and pestle before adding to the smoothie)
