Ingredients
- 1 pound organic carrots, peeled and roughly grated
- 2Â tspns Dijon mustard
- 1 tbspn freshly squeezed lemon juice (one lemon)
- 1 ½ tbspns vegetable oil
- 1 ½ tbspns extra virgin olive oil
- ½ tspn honey
- 1/3Â tspn salt
- ¼ tspn teaspoon freshly ground black pepper
- 2 tbspns chopped fresh cilantro
- 2Â shallots, minced
In a salad bowl, combine mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, cilantro and shallots and toss.
