Great Grated Carrots

Ingredients

1 pound organic carrots, peeled and roughly grated

2 tspns Dijon mustard

1 tbspn freshly squeezed lemon juice (one lemon)

1 ½ tbspns vegetable oil

1 ½ tbspns extra virgin olive oil

½ tspn honey

1/3 tspn salt

¼ tspn teaspoon freshly ground black pepper

2 tbspns chopped fresh cilantro

2 shallots, minced

In a salad bowl, combine mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, cilantro and shallots and toss.
