Great Grated Carrots

Carrots are among the power foods with a host of health benefits, from promoting healthier skin to preventing heart disease and lowering the risk of cancer. Cold-pressed Living Juice’s Carrot Kick is one tasty way to fill up on this rich source of beta-carotene. This easy to prepare salad is another!

Ingredients

  • 1 pound organic carrots, peeled and roughly grated
  • 2 tspns Dijon mustard
  • 1 tbspn freshly squeezed lemon juice (one lemon)
  • 1 ½ tbspns vegetable oil
  • 1 ½ tbspns extra virgin olive oil
  • ½ tspn honey
  • 1/3 tspn salt
  • ¼ tspn teaspoon freshly ground black pepper
  • 2 tbspns chopped fresh cilantro
  • 2 shallots, minced

In a salad bowl, combine mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, cilantro and shallots and toss.
