Raw Mashed "Potatoes”

You can't leave mashed potatoes out of a holiday meal - but you can leave potatoes out of the mash for a raw vegan treat.


1 head cauliflower, cut into florets

1/4 cup pine nuts

2 gloves garlic, minced

1/4 cup olive oil

sea salt to taste

freshly ground pepper to taste

1 tbsp fresh chopped thyme


Grind pine nuts in food processor until fine.

Add cauliflower and process until fine.

Pour in 3/4 of the olive oil and process. Continue adding oil until the mixture is creamy and smooth.

Add salt and pepper to taste.

Sprinkle with thyme.
