Raw Mashed "Potatoes”

You can't leave mashed potatoes out of a holiday meal - but you can leave potatoes out of the mash for a raw vegan treat.
Ingredients
- 1 head cauliflower, cut into florets
- 1/4 cup pine nuts
- 2 gloves garlic, minced
- 1/4 cup olive oil
- sea salt to taste
- freshly ground pepper to taste
- 1 tbsp fresh chopped thyme
Recipe
- Grind pine nuts in food processor until fine.
- Add cauliflower and process until fine.
- Pour in 3/4 of the olive oil and process. Continue adding oil until the mixture is creamy and smooth.
- Add salt and pepper to taste.
- Sprinkle with thyme.
