Raw Mashed "Potatoes”

You can't leave mashed potatoes out of a holiday meal - but you can leave potatoes out of the mash for a raw vegan treat.


  • 1 head cauliflower, cut into florets
  • 1/4 cup pine nuts
  • 2 gloves garlic, minced
  • 1/4 cup olive oil
  • sea salt to taste
  • freshly ground pepper to taste
  • 1 tbsp fresh chopped thyme


  1. Grind pine nuts in food processor until fine.
  2. Add cauliflower and process until fine.
  3. Pour in 3/4 of the olive oil and process. Continue adding oil until the mixture is creamy and smooth.
  4. Add salt and pepper to taste.
  5. Sprinkle with thyme.
