Short Description:
Blueberries are coming into season, and they're not just a sweet, succulent treat - when it comes to health benefits, you can't do much better than this superfood. It's low in calories and sky-high in nutritional value (not too mention flavor!).
Look for deep purple berries that are firm and plump (we prefer organic). Stored in a plastic bag in the fridge, they should last for up to a week. When you take them out of the refrigerator, put them in a bowl of cold water until they reach room temperature for maximum juiciness and flavor.
Blueberries are great by the handful, but if you want to get creative, try this salsa, which works with fish, or as a dip.
Ingredients:
- 2 cups chopped organic, fresh blueberries
- 1 cup whole organic, fresh blueberries
- ¼ cup fresh organic lime juice
- 3 tbsps chopped, organic cilantro
- 1 seeded and minced organic jalapeno pepper
- 1/3Â cup diced organic red bell pepper
- ½ tsp kosher salt
