- 1 Medium Sweet Potato
- Almond Butter
- Any topping of your choice!
- Cut the sweet potato into 1/4 inch slices.
- Toast the sweet potato slices just as you would a piece of bread. If you like your toast a little on the crispy side, the sweet potato toast will take a little longer (possibly a couple rounds through the toaster).
- Add your toppings! One of my favorites is almond butter with banana slices. A savory favorite is sliced avocado with a sprinkle of salt and pepper.
