Watermelon, Mint and Lime Summer Salad
Nothing says summer quite like watermelon! This refreshing salad is a play on our seasonal Watermelon Mint juice and combines juicy watermelon, cooling mint, and bright lime for a simple dish that's perfect for picnics, barbecues, poolside lunches, or warm evenings on the patio.
Naturally hydrating and packed with fresh flavor, this salad comes together in minutes and celebrates some of summer's most vibrant ingredients. Enjoy it as a light side dish, a healthy snack, or add your favorite protein to transform it into a satisfying meal.
For a vegetarian option, try topping with crumbled feta cheese. To keep it fully vegan, enjoy as is or add avocado, edamame, or grilled tofu for extra staying power.

Ingredients
- 4 cups watermelon, cubed (seedless watermelons are easiest for this recipe, but any type will do)
- 1 organic, English cucumber, diced
- ¼ cup fresh mint leaves, chopped
- Juice of 2 organic limes
- 1 tablespoon extra virgin olive oil
- Pinch of sea salt
- Freshly ground black pepper, to taste
Optional Add-Ins:
- ½ avocado, diced
- ½ cup shelled edamame
- 1 cup grilled tofu, cubed
- ¼ cup crumbled feta cheese (vegetarian)
Recipe:
- In a large serving bowl, combine the watermelon, cucumber, and mint.
- In a small bowl, whisk together the lime juice, olive oil, sea salt, and black pepper.
- Pour the dressing over the salad and gently toss until evenly coated.
- Fold in any optional add-ins desired.
- Chill for 15–20 minutes before serving or enjoy immediately.
