Creamy Cucumber Dill Dressing

Ingredients:
- 1 cup organic cucumber, cubed and peeled
- 4 ounces tofu, (firm provides a bit more protein, but silken works too!)
- 1/4 cup water (or more depending on desired consistency)
- 2 tsp fresh, chopped dill
- 1 tsp vinegar (apple cider or white wine)
- 1 tsp tahini
- 1/2 tsp sea salt
- Freshly ground black pepper, to taste
- Optional: juice of half a lemon for extra brightness
Makes about 2 cups
Recipe
- Add the cucumber, tofu, water, dill, vinegar, tahini, salt, pepper, and lemon juice (if using) to a food processor or high-speed blender.
- Blend until smooth and creamy, scraping down the sides as needed. Add a splash more water if you prefer a thinner dressing.
- Taste and adjust the seasoning with additional salt, pepper, or lemon juice if desired.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to come together and thicken.
