RECIPE:
- Clean threads from sugar snap peas
- Peel & segment pink grapefruit, squeeze excess juice into bowl
- On mandolin shave fennel head thin
- Add sesame oil & seeds
- Season with salt
- Finish w/ micro celery or sprouts
INGREDIENTS:
- Clean fennel bulb, shaved thin on mandolin
- 1/2 lbs. sugar snap peas, threads removed
- 1 pink grapefruit
- 1/2 cup micro celery or sprouts
- 2 tbsp. white sesame seeds
- Salt
- Sesame oil
