The school year is back in full swing, which means backpacks, homework, and hungry kids ready for a snack after pick-up. The after-school snack can bridge the gap between lunchtime and dinner, keeping energy levels up, moods steady, and growing bodies and brains focused for homework and activities.

But here’s the challenge: kids want something fun and tasty, while parents want healthy, nourishing options that don’t take forever to prepare. That’s where plant-based snacks save the day — wholesome, colorful, and full of flavor, without the added sugars or processed ingredients.

These colorful "rainbow" smoothies provide a delicious way to sneak in a mixture of fruits and veggies! 

Rainbow Smoothies

Ingredients:

  • 1 cup frozen organic mixed berries (like organic strawberries, organic blueberries)
  • 1 banana
  • ½ cup organic kale or spinach
  • 1 cup almond or oat milk

Recipe:

  1. Blend all ingredients until smooth.
  2. Pour into fun cups or jars with colorful straws. 

Bonus: Add a spoonful of flax or chia seeds for extra nutrition. To make a "rainbow" smoothie, try blending a little of each of the berries/greens separately and then pouring them in layers in the cup.
