Veggie-Packed Burrito Bowl

Looking for an easy, veggie-filled meal that's not only tasty but also fun to make? Look no further than this veggie-packed burrito bowl.  What makes burrito bowls so fun to make is that picking the ingredients is completely up to you! Burrito bowls are a great option for families with differing preferences, and perfect for meal prepping as you can switch out the toppings throughout the week. The ingredients below are all suggestions - feel free to swap out any veggies for your favorites! Ingredients:

Base: 

  • Organic rice
  • Quinoa 
  • Quinoa/rice mix 

Suggested Toppings: 

  • 1 medium organic tomato, diced
  • 1 organic avocado
  • 1 can organic black beans 
  • 2 cups organic romaine lettuce 
  • 2 handfuls cilantro 
  • Optional add-ins: Organic carrots, cooked sweet potatoes, green beans, snap peas, you name it! 

Sauce:

  • 1/2 cup vegan sour cream (vegan greek yogurt) 
  • Chipotle paste (add depending on your spice preference!) or blend chipotle peppers in adobe sauce with cumin
  • 2 cloves organic garlic, minced
  • Juice of one organic lemon 
  • Salt to taste

Recipe:

  1. Cook as much rice and/or quinoa as you like (depending on how many you are serving/if you are meal prepping). Be sure to rinse your rice and quinoa until the water runs clear! 
  2. Prepare whichever toppings you would like. Our favorites are romaine lettuce, black beans, tomatoes, avocados and cilantro.
  3. In individual bowls, top rice or quinoa with your veggie choices. You truly can't go wrong adding to this bowl! 
  4. Top with a tangy and spicy sauce by whisking or blending all sauce ingredients together.
  5. Enjoy!
