Cucumber Feta Salad

Spring is here which means it’s time for easy and simple summer salads! I love the idea of heading to the kitchen to get started on making a simple salad that is healthy and delicious, but does not require a lot of time. This salad can be served for both lunch and dinner! Feel free to double up the recipe if you have more company!

For this Cucumber Feta Salad, I sliced an English cucumber, red onion, and chopped up fresh dill. I added a dash of whit vinegar, sugar and a pinch of salt. The cucumbers are crisp, crunchy, and refreshing. The dill, red onion and feta cheese make this both flavorful and colorful. This is the perfect side salad for any summer meal! You can even add tomatoes and olives to spice it up a bit!

INGREDIENTS:

  • 1 English cucumber, sliced
  • 1/2 small red onion, thinly sliced
  • 1 tablespoon white vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh dill
  • 1/4 cup feta cheese

DIRECTIONS:

  1. In a small bowl, combine the cucumber slices, red onion slices, vinegar, sugar, and salt. Stir to combine.
  2. Add in chopped dill and feta cheese. Stir again.
  3. Serve salad chilled.
