Peppermint Patties Re-done

  1. In your food processor fitted with the S blade, combine all ingredients for the mint filling.
  2. Blend until smooth and uniform
  3. Roll the mixture into balls and then flatten into patties gently using the palm of your hand.
  4. Place on a baking sheet and transfer to the freezer for 20 minutes
  5. Add the chocolate ingredients to the food processor and process until smooth
  6. Remove the minty disks from the freezer and dip into the chocolate
  7. Return to the freezer as needed until hardened


Mint Filling :

  • 1/3 cup organic dried shredded coconut
  • 1/3 cup organic cashews or skinless almonds
  • 2 tablespoons cacao butter, melted (use a warm water bath)
  • 2-3 TB raw agave
  • 1-2 tsp peppermint oil
  • Pinch of salt
