Greek-inspired vegan pea dip

Short Description: 

Fava, a Greek dip made by beans of the same name, is a delicious and nutritious appetizer. Although it may be difficult to find fava beans outside of Santorini, our recipe calls for yellow split peas or yellow lentils. Either work to make this healthy and unique vegan appetizer or snack. Ingredients:

  • 1 cup yellow lentils or yellow split peas
  • 1 organic onion, finely chopped
  • 1 organic lemon
  • 1/4 cup of olive oil, plus more for drizzling
  • 1/4 cup organic parsley, chopped 
  • Salt and pepper 
  • 1 teaspoon ground cumin

Recipe: 

  1. In a medium saucepan, combine onion, lentils, cumin, salt, pepper and 4 cups of water to a boil. Once boiling, reduce heat to medium/low for about 25-35 minutes or until lentils are soft. 
  2. Let the mixture cool to room temperature. 
  3. Puree the lentil mixture with 1/4 cup of olive oil, parsley, and juice of the lemon. Add salt and pepper to taste. 
  4. Serve chilled or room temperature with drizzle of olive oil, parsley and extra lemon juice on top. Enjoy with crackers, pita chips, carrots, celery or peppers!
