Ingredients

  • 1 cup green or brown lentils, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale, chopped
  • Juice of 1 lemon
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large soup pot, heat a bit of vegetable broth over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until they begin to soften.

  2. Add the carrots and celery to the pot and sauté for another 5 minutes, allowing the vegetables to become tender.

  3. Stir in the lentils, diced tomatoes, vegetable broth, ground cumin, ground coriander, and smoked paprika. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the lentils are fully cooked and tender.

  4. Season the soup with salt and pepper to taste. If you prefer a thinner consistency, you can add more vegetable broth at this stage.

  5. Just before serving, stir in the chopped spinach or kale and let it wilt into the soup.

  6. Finish by adding the fresh lemon juice for a burst of flavor.

  7. Ladle the Hearty Vegan Lentil Soup into bowls, garnish with fresh parsley if desired, and enjoy!
