Ingredients
- 1 cup green or brown lentils, rinsed and drained
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups fresh spinach or kale, chopped
- Juice of 1 lemon
- Fresh parsley for garnish (optional)
Instructions
-
In a large soup pot, heat a bit of vegetable broth over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until they begin to soften.
-
Add the carrots and celery to the pot and sauté for another 5 minutes, allowing the vegetables to become tender.
-
Stir in the lentils, diced tomatoes, vegetable broth, ground cumin, ground coriander, and smoked paprika. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the lentils are fully cooked and tender.
-
Season the soup with salt and pepper to taste. If you prefer a thinner consistency, you can add more vegetable broth at this stage.
-
Just before serving, stir in the chopped spinach or kale and let it wilt into the soup.
-
Finish by adding the fresh lemon juice for a burst of flavor.
-
Ladle the Hearty Vegan Lentil Soup into bowls, garnish with fresh parsley if desired, and enjoy!
